You might say we cast a wide net here at Season, but it’s not to fish more. It’s actually to fish less. Our anchovy fillets are caught using nets with large enough spacing so smaller anchovies can swim through. This allows them to grow to maturation and reproduce. The wider netting also helps minimize bycatch, the accidental catching of other species. Overall, it’s a more sustainable way to fish, one that upholds our century-old belief: What we catch today should never come at the expense of what we might tomorrow.
